In a region traditionally ranched with Angus and Herefords, we often get the question, "Why Highlands?!" Well, Scottish Highland cattle are smaller, more efficiently-framed animals making them a great addition to any farm or ranch. And because of their heavy coats, Highlands produce a more naturally lean beef product, fed and finished exclusively on grass pasture.

Scottish Highlands are the oldest breed of cattle on the planet
With a thick hide and coarse hair, highlands evolved without a fatty insulation layer around their bodies. Rather, all of their produced fats are marbled into their meat. The result is a tender, mouth-watering, flavorful beef, with the added benefit of having fat and cholesterol levels similar to that of chicken.
